05.2 - Application
Wet prep, dish and bar.
Intermittent flow, trolleys and boots, a nightly washdown and a solids load that arrives in bursts. The drain has to take a bucket emptying all at once, then sit dry for an hour.
The floor conditions
- What lands on the floor: washdown water, grease, flour, ice, broken glass and whatever comes off a trolley wheel.
- Flow shape: bursty. One sink emptying is the design case, not the average flow.
- Cleaning regime: nightly, by the closing shift, with a hose and a squeegee.
- Who inspects: the local health authority, against a written cleaning schedule.
How it fails
- A slot run with no rodding access: fine until a bucket of trim goes down it.
- A basket with a flush lip - it gets kicked closed and then never lifted.
- A cleanout cover bedded in mastic: it becomes a bump in the floor and is never opened again.
What we specify
- Line under the pass or along the wall - KitchenSlot 400 where the floor is seen.
- Single low point at a sink or door - DebrisGuard TB with a perforated lift-out.
- End of the run - AccessClean HD for rodding and inspection.
- Bar and front of house - KitchenSlot 400, slot width set by what is allowed down it.
What to send
- Run length and the falls on the plan
- A photograph of the floor where it will sit
- What goes down it on a bad day
- Who cleans it, how often, with what
Structure only - not published
- Photographs from installed projects - none cleared for publication yet
- Two reference projects with permission to name the operator
- Which market's audit wording this page should answer to first (BRCGS / IFS / SQF)
